The first 2 weeks are hard because you can't have any sugar/starches, so that includes all fruit and some vegetables. But there are a lot of tasty recipes. And I am slowly adding fruit back in this week, making sure to check occasionally to see if I'm still losing weight. I did cheat on Mother's Day, but that's another post entirely. Anyway, here are some pictures of what we are eating and what I sent Aaron to work with the first week. (I got lazy the second week. : )
Salad, low-fat cheese sticks, peanuts, tomatos. celery, turkey roll-ups w/ cilatro mayo, lettuce, bell pepper and green onion. Oh, and sugar-free gum. We also found peanuts, Crystal light and Fudgsicles to be huge favorites during the first two weeks.
We ate a lot of eggs, scrambled with bell peppers and onions. Also, egg beaters or boiled eggs.
This is one of my favs: Savory chicke saute with mashed cauliflower. The chicken is sauted with onion, rosemary, and garlic then you pour chicken broth into the pan and scrap up the browned bits. It's so quick and easy!
We were also allowed black beans (I obviously took to much!), but it was yummy with garlic and cumin! And we ate a lot of fish: this is salmon with olive oil, garlic, lemon juice, salt and pepper with asparagus and green beans on the side. My friend, Rachel makes an awesome tilapia dish that we've had several times too, but no picture.
Wish us luck! I am determined to lose this annoying weight gained mostly during my 2 pregnancies. It's been too long - 5 years since I got married and started having kids.

Good Luck Jacky and Aaron! You've made it through the worst part, now you just have to continue. Taylor's favorite snacks were always cottage cheese and nuts on the side. Let me know if you need recipes- we have lots!!!
nice job guys!
Good luck!!
HEY SiS! You're my greatest idol........ after chatting with you and getting all hyped up about losing weight I found it's hiGHLY diFFICULT to stay away from carbs, even if only for a few weeks! Without thought the next morning I bought a muffin for breakfast....I just love breads, pastas, muffins way too much!! I'll try it again, though it really takes some reprogramming. Very impressed by you and Aaron!
Hey Jackie!
Good job! I'm not one to give advice on dieting where you have to cut out foods or eat this and that at certain times. Its always a hard struggle for me too but if I could give you some advice I'd say I try to do this: fill up on lots of healthy fresh snacks, cook with olive oil, eat lean poultry and fish, whole grains, and vary your exercises with spurts of high intensity... sorry I know I preach too much. No, but I think you're doing great! You look great! Have you heard of Zumba? Its a Latin dancing high intensity aerobic workout. Its a lot of fun it doesn't even feel like you're having to workout! I took a class last weekend with my sister at the YMCA and it makes you work hard but you don't even notice that much bc its fun and high energy music like salsa! Email me if you're interested and I'll tell you more! Good luck with everything! Love you! =)
Great pictures of your food by- the- way! haha Derek thinks its funny that I like to take pictures of our food sometimes. I think its maybe an Asian thing bc I notice that Asian people do that! Also, one my big weaknesses is choclate chip cookies. One tip I heard that I like is to bake a batch and then double bag most of them in freezer bags for later. That way we don't eat them all at once and then we take it out and share them at picnics and things and they still taste great! It works well for us.
Oh! Well I guess I have to eat the bag of "onolicious Big Island Cookies" we were planning on sending to you guys. I guess Elder Auna wouldn't mind having the goodies. :) Wow! I don't think I could last a day on this diet.
Love you guys!
Mom
LOL. maybe it is an asian thing to do! I'm always taking pictures of my food!! ^_^ Jackie, you are awesome!!! 6-8 pounds??!!! That seriously is amazing! Good luck!
