Soo... I didn't escape Michelle and Trina thoughtfulness after all! They planned a birthday party for me under the ruse of a "Girls' Night Out" at Annette's. (Apparently they had a laugh at reading my original birthday blog and were proud of being so sneaky. : ) They succeeded in surprising and embrassing me. But I got over the intial embarrassment and had a great night hanging out with these truly inspiring women and eating some delicious food (I put the recipes sent to me on the bottom of this post)... I feel blessed and grateful for such great friends!
I could write libraries filled with what I admire about my friends, but I will contain myself and just say a brief something about what I am grateful for about each of these women.

Gina is truly sincere in her kindness and what she says. I can tell that she is a fabulous cook even though I've only tasted some her delicious cupcakes she made. Alexandra is genuine, generous and relates to everyone through her wit & humor. She is so dang funny! Sarah is down-to-earth, a true friend, selfless in serving on others, and is amazing resource of what this city has to offer our children. I'm grateful to her for always being there for me. Trina is straightforward and inspires me in that she is always looking for ways to develop her talents. She's not only a dreamer but strives to be proactive about her goals. Elizabeth is so thoughtful, generous, and she really listens to people. I think people are drawn to her happy and peaceful nature. Brooke has a great sense of humor, and is rare and special in that she truly connects with people in a genuine way; and she remembers what is important to them, no matter how long it's been since she's seen them. (I borrowed that from someone who expressed what I was thinking better. : ) Elaine so comfortable to be around, like when you're around family. She is a great storyteller, and really expresses her thoughts and knowledge well. I admire what a great teacher she is to her children and I learn so much from hearing how she explains the world to them.

Tiana always has a beautiful smile, no matter what is going on, even if she isn't feeling well and she is amazingly well-rounded. I admire her many talents in art & design, music, baking, sewing as well as her faith, knowledge and intiative. Kaelene has a quiet strengh, such insight and has been a great jogging partner even though we've been on hiatus ;). I feel that she is harboring talents that I don't know of yet because of her humility. I feel that she is a kindred spirit in many ways, but espe

cially since she was raised in Alaska and married a local Hawaii guy like me. Michelle is thoughtful, has great taste, helpful (she organized my cabinets yesterday!), and is the kind of person that is a true friend. While she the kind of person that has a ton of best friends, I really consider her one of mine. People are drawn to her because she is so immediately warm and so fun to be around. Rachelle is another inspiring, proactive dreamer. I love how she is so invovled in her children's present and how she plays with them (I'm trying to be better about that) - I can see how Lizzie's maternal kindness, leadership qualities, imagination and big heart are a reflection of and compliment to her mom. I love how Annette is able to find humor in everything (I may laugh alot but I really think she is so funny!), and she is the kind of mom I want to be in that she is able to juggle so many things yet she always remains so poised and put-together. She is an awesome teacher too.

Here's that chocolate cake recipe for that moist, delicious cake that Trina made - it's from a book called The Cake Doctor.

Ingredients:1 box chocolate fudge cake mix
3.9 ounce package of instant pudding mix
4 eggs1 cup sour cream
1/2 cup warm water
1/2 cup vegetable oil
Mix all of this together on low speed for 1 min until everything is blended. Then mix 2 more minutes on medium speed - it will be really thick and have a sort of marshmallow-looking texture to it. (You'll know what I mean when you see it.) Once it's mixed, add 1 1/2 cups of semi-sweet chocolate chips folded in with a spatula.Bake in an oiled/floured bundt pan at 350 for 45-50 minutes. If you do this as cupcakes, bake only about 20 minutes. After baking, let it cool about 20 minutes in the baking pan, then remove from the pan and let it cool more.

1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 scallions, thinly sliced (white and green parts)
Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade. Add the scallions and pulse twice. Serve at room temperature.
